Vegetarian Udon

Broth: boil 1.5 liter of water with 2 shitake mushrooms, 2 spring onions, 1/2 onion, 5 cloves of garlic, 6 slices of radish, 5 slices of carrot, 2 slices of ginger for 1 hour. Add 1/2 tbs of sugar and soy sauce to your preference.

Toppings: nori seaweed, sliced spring onion, sesame seeds, and soft boiled egg (if you like)
