Tortilla di Patata

Tortilla di patata is a Spanish omelette. Different from other omeletes, tortilla di patata is fried with caramelized onion, garlic, and potato.

Recipe:

1. Slice 1 large potato, 1 medium sized onion, 2 cloves of garlic thinly.

2. Saute them in 2 tbs of vegetabale oil until caramelized.

3. Toss them in 3 eggs, add 1 tsp of salt, 1/2 tsp of pepper, 1/2 cup of grated cheddar cheese. Mix with a fork.

4. Heat 2 tbs of vegetable oil and fry it. Serve with spicy mayo and veggies.
