Easy Japanese Potato Salad

Easy peasy. I often make a large batch of this salad and store it in the fridge for lunch box.

1. Slice onion and cucumber, add a pinch of salt and wash after 5 minutes

2. Dice and boil potato and carrot until soft. Mash the potato.

3. Mix all the veggies, add mayonaise, a pinch of salt, sugar, and pepper

DONE!
