Thai Roti Gluay

Thai banana pancake is called roti gluay. Unlike most pancakes that are fluffy, roti gluay is flakey and crunchy. When I visited Bangkok, I saw roti gluay vendor almost in every corner of the road. I ate this comfort food almost everyday.

Here´s how I made the flakey dough:

1. Mix 1 cup of high gluten flour with 1/2 tsp of salt and 3-4 tbs of water.

2. Knead until the dough is smooth. Devide into 3 balls.

3. Drizzle some oil on each ball. Let it rest in a covered bowl for 6 hours.

Here´s how I fried the roti gluay:

1. Flatten the stretchy dough as this as you possible can.

2. Heat any flat pan. Smean 1 tbs of oil on the survace.

3. Put the paper thin dough on the pan.

4. Put the sliced banana (I used barangan banana) in the middle of the skin.

5. Cover the banana with the skin and make a rectangular shape.

6. Fry until golden.

In Thailand, roti gluay is served with cheddar cheese, chocolate sauce, chocolate sauce, etc. Put any toppings that you like. You can´t be wrong.
