Javanese Sate Buto
In Indonesia basically sate means grilled skewered meat. While most sates are served in either peanut sauce or sweet soy sauce, sate buto (or literally means monstrous giant sate) is served without any sauce.
Sate buto is heavily marinated though. For 1.5 cup of meat (beef, chicken, or pork), here´s the marinade: Blend 3 red jalapeno and 2 birdseye chili, 1 tbs of tamarind paste, 2 tbs of sugar, 3/4 tsp of salt.
Marinate for at least 1 hour and then saute the meat with a little bit of oil.
Put the chunks in skewer and grill over fire.
