Kimchi Duruchigi

Duruchigi is pork belly stir fried in spicy sauce. I love to cook mine with kimchi. It is simple and delish.

Recipe:

1. Marinate 2 cups of thinly sliced pork belly in 2 tbs of soy sauce, 2 tbs of Korean chli paste/kojujang, 2 tbs of sugar, 1 tbs of garlic, 1/2 cup of sliced onion, and 1/2 cup of sliced spring onion. Let it marinate for 15 minutes.

2. Heat 2 tbs of vegetable oil in a pan. Stir fry the marinated pork belly with 1 cup of sour kimchi. Do not add water please.

3. Serve with some greens. I picked longevity spinach and two kinds of lettuces from the garden.
