Red Amaranth Pancake or Fritter?

Amaranth, green or red, is good for pancake and fritter because as soon as it is heated, amaranth turns really soft and melts in our mouth. In Indonesia, usually amaranth is harvested by pulling the whole plant. I do it a little bit differently. I only harvest the leaves and let the plants grow up to 1 m tall.
