Beet Noodle
Inspired by Korean kal guksu or knife noodle, I made this homemade noodle without any machine. Instead of water, I used beet juice to give the noodle a nice color and flavor.
Recipe:
1. mix two cups of all purpose flour, 1 egg, 1/2 cup of beet juice, a pinch of salt, and 1 tbs of vegetable oil
2. knead the dough until it is incorporated, let it aside under a cover for 10 minutes
3. knead the dough again, let it aside under a cover for 10 more minutes
4. thin the dough using a roller
5. flour it well to prevent sticking and cut it thinly
This noodle can be made into any dishes. This time I serve it in cold cucumber soup.
