Tape Ketan: The Alcoholic Dessert
In Indonesia, alcoholic DRINK production, distribution, and sale are heavily regulated. However that is NOT the case with the production, distribution, and sale of alcoholic FOOD such as tape ketan, Indonesian alcoholic dessert made of fermented glutinous rice. It´s produced and sold everywhere and even children are allowed to eat this.
I made tape ketan a few days ago and it is ripe this morning...so yeah... I don´t drink alcohol for breakfast. No no no! I just eat it.
Recipe:
1. rinse 250 gr of purple gluutinous rice and submerge in water for 4 hours
2. remove the water and steam the rice for 30 minutes
3. let it cool
4. spread the glutinous rice thinly on a plate(make sure the plate is free from oil)
5. grate the tape yeast and sprinkle it on the glutinous rice evenly
6. move it to a container with a lid (I like using earthen container for best fermentation)
7. wait for 3 days to complete the fermentation
I tried the Korean rice wine making method to turn the tape into rice wine.
1. add 1 cup of the glutinous rice with tape yeast above to an earthen container
2. sprinkle 1 tsp of dry bread yeast
3. add 500 ml of drinking water
4. close the lid of the container and check every 24 hours
