Mung Bean Coconut Jelly
The Indonesian name of mung bean coconut jelly is kue hunkwe. It´s my childhood favorite. Mung bean coconut jelly comes in many different bring colors. It looks dull and unappetizing without the color. I don´t like putting artificial color in it though. This time I try using beet as natural food coloring.
Recipe:
1. mix 1/2 cup of mung bean flour, 1/2 cup of sugar, 2 and 1/2 cups of coconut milk
2. add 1 pandan leaf and 1 tbs of diced beet
3. bring to boil, keep stirring it to prevent lumping
4. it thickens as it boils
5. when thick bubbles form, it´s ready
6. cast the jelly in any molds
7. it takes 30 minutes for the jelly to harden
