Baek Kimchi
Baek kimchi is a white kimchi preserved in brine. This kimchi is not spicy at all and it is very soupy.
Recipe:
1. cut 2 medium sized napa or chinese cabbages (see picture), wash and rinse
2. sprinkle 8 tbs of salt to the napa cabbages throughly and evenly
3. turn the salted napa cabbages every 15 minutes
4. in 1 hour wash the nappa cabbages thoroughly and rinse
5. slice and cut carrot, chive, chili, leek into match sticks
6. sprinkle 1/2 tsp salt to the colorful match sticks and mix well
7. mix the match sticks with the salted napa cabbages...make sure you fill each folliage with the match stick veggies
8. submerge them in the brine
9. put in a container with a lid in a room temperature for 2 days then refrigerate it
How to make the brine:
1. mix 4 cups of drinking water with 4 tbs of salt and 2 tbs of sugar
2. blend 5 cloves of garlic and one korean pear with electric blender and squueze the juice in the brine bowl
3. mix it well
4. add 1/2 coarsely chopped onion
