Banana Muffin

My daughter and I don´t like banana muffin. However when I made the banana muffin using this easy recipe, we both loved it so much. We are now addicted to it. lol

Recipe: (always preheat the oven)

1. mix (you can use spoon, no electric mixer is necessary): 1 cup of banana

1 large egg

1/2 cup of sugar

1/2 cup of vegetable oil

2 cups of flour

a pinch of salt

1/2 tsp of baking soda

2. once incorporated, fill the paper liners with the muffin batter

3. bake for 25 minutes at 180 C

The best way to preserve bananas is to sun dry them. However, we can also bake the bananas in the oven until the honey oozes out (natural sugar preservative) then put them in the fridge. After two months my preserved bananas still look and taste fresh. No mold whatsoever.
