Banana Harvest for Banana Muffin
I harvested 20 kg of nangka banana 2 months ago. I used some of them to make banana chips and preserved the rest by drying them in the oven (I should have sun dried them but I was impatient). When I baked the bananas in the oven, gooey honey oozed out from them. Later I learned that the sticky banana honey played an important role in preserving the banana.
I don´t know how many times I have used the preserved banana to make muffin...too many times! I still have 5 kg of the preserved bananas left in the fridge though. And guess what? A new bunch of bananas emerged from the neighboring banana tree just a few days afterwards. Now this is a serious affair!
