Oi Naengguk (오이냉국)
Oi means cucumber, naeng means cold, and guk means soup in Korean language. Can you guess what Oi Naengguk is? It´s icy cold cucumber soup, a perfect summer side dish.
Recipe:
1. slice large cold green cucumber into match sticks (about 2 cups)
2. add 1 tbs of sliced chili, 1.5 tbs of sliced spring onion, and 1 tbs of garlic
3. add 1 tbs of soy sauce, 1/2 tsp of salt, 2 tbs of sugar, 4 tbs of vinegar, and 1 tbs of sesame oil
4. add 1 cup of icy cold water
5. sprinkle with crushed toasted sesame seeds
6. top with cherry tomato if you like
