Dawet

Dawet is a Javanese dessert drink made of rice and mung bean flour, suji leaf, coconut milk, and palm sugar. Its sweetness and milkiness go well with the chewy dawet droplets.

Recipe:

Dawet: 1. blend a handful of suji leaves with 2 and 1/2 cups of water, sieve the juice

2. mix 2 cups of the sieved suji juice with 1/2 cup or rice flour, 1/2 cup of mung bean flour, a

pinch of salt

3. boil and stir until it forms a thick paste and turns slightly transparent

4. prepare ice cold water in a large bowl

5. put the cooked dawet batter in the dawet maker over the ice cold water

6. chewy droplets of dawet are instantly formed in the water

7. take 4 tbs of dawet droplet, add 2 tbs of melted palm sugar, 1/2 cup of thick coconut milk

and some ice
