Geotjeori: Sweet Fresh Kimchi in Sesame Oil

Geotjeori is my girl´s favorite Korean napa cabbage salad. It is savory, spicy, and sweet at the same time.

Recipe:

1. cut 1 kg of napa cabbage into random bite-sized pieces

2. mix them with 6 tbs of salt, set it aside and turn them every 10 minutes for an hour

3. rinse the napa cabbage, make sure the salt is rinsed completely

4. squeeze the water

5. mix 3 tbs of chili flakes, 3 tbs of kimchi fish sauce, 3 tbs of garlic, 1 tbs of rice porridge (boil 1/2 tbs of rice flour and 2 tbs water), chopped chives (onion & spring onion too if you have them)

6. rub the sauce with the rinsed napa cabbage

7. add 2 tbs of sugar and 3 tbs of sesame oil
