Chapssaltteok
Chapssaltteok is a Korean mochi dessert made of sticky rice flour. This is one of the easiest treats to make. It is chewy, nutty, and sweet. The key to make a tasty chapssaltteok is to get good quality sticky rice flour ( I bought the Korean one) and peanut.
Recipe:
1. fry 4 parts of peanut and blend it with 1.5-2 part of sugar and a pinch of salt for the filling
2. mix 2 cups of sticky rice, 2 tbs of sugar, a pinch of salt, and 3/4 cup of water
3. microwave for 1.5 minutes then knead the dough with spoon for 1 minute
4. microwave the dough for 1.5 more minutes then knead it for 2 more minutes
5. dust the counter with corn starch
6. toss and cut the dough on the corn starch, make sure all sides are covered in the starch
7. cut into any desired size rectangles
8. put generous filling in the dough and pinch it into a ball.
