Katetong or lidah kucing is an Indonesian cookie that resembles a cat tongue. Indonesians are very familiar with this cookie because the cookie is usually served in any festivities (although it originally was only served by the Chinese Indonesians during the lunar new year).

I love the following lidah kucing recipe the most. It is cunchy, firm, and not too sweet. Here´s how to make lidah kucing : (Always preheat the oven) 1. Mix 250 gr of salted margarine with 200 gr of sugar until it is soft and white. 2. Add 200 gr of low gluten flour, and 1 tsp of vanilla. (I added instant cofffee to the batter too) 3. In a separate bowl, mix 2 egg white until it is fluffy and firm. Then mix it to the first batter. 4. Put the mixed batter in a piping bag, make around 1 cm diameter hole at the tip then squeeze the batter on the lidah kucing tray (or any tray) as long as your pinky. 5. Bake it until the edges of the cookies turn brown at 250 C.
