Sweet potato cupcake
I started the first day of my summer break baking sweet potato cupcakes. I used purple sweet potato I harvested from my garden last week. I got only 2 medium sized sweet potato but it was enough to make 10 cupcakes.
Here's an easy way to make the sweet potato cupcakes: Always preheat the oven before preparing the batter 1. mix 1 cup of mashed purple sweet potato with 1/2 cup of vegetable oil and 1 cup of sugar. Keep mixing them for 5 minutes 2. add and mix 2 eggs, 1 cup of flour, 1 tbs of baking soda to the batter for 2 minutes 3. fill the paper cups with the batter and bake in the oven for 25 minutes at 200 C
